After cooking a large meal with a prime rib or other large roast beef cut, you probably will want easy dinners for a few days afterward. These beef dips are quick and change up the meal of plain sliced beef to make it a sandwich with cheese that is then dunked in delicious beefy juice.
Flavoring the Au Jus
Using a mix or canned au jus is a time saver, which is the point of this recipe. The best part is since you warm up the beef slices in the au jus, any spices that you use on your beef roast will mix into the au jus. If you look at the au jus in the photos you can see the rosemary and other spices in it. That’s from the prime rib seasoning that we used on our roast and it makes the BEST au jus!
Use Another Type of Beef Roast
Prime rib is a once-a-year kind of meal, so if you want to use another type of leftover beef roast, simply slice it thin and use it in the recipe as directed.
How to Make Leftover Prime Rib Beef Dips
- Prepare the au jus packet according to the instructions.
- Slice the rolls through the middle but all the way through.
- Combine the butter and the garlic powder. Butter both sides of the bun.
- Broil the buns until the butter is browned and the edges crispy.
- Soak slices of beef in hot au jus for 2 minutes.
- Divide the meat between 4 rolls.
- Top each bun with 2 slices of Swiss cheese.
- Broil until the cheese is melted.
- Pour au jus into 4 small bowls for dipping.
Types of Bread to Use
The bread needs to be a dense, thick-crusted bread to hold the sandwich together while dipping. You can cut a French loaf in half, use French rolls, or longer Portuguese rolls.

How to Store leftovers
Since this is already a leftover dish it is easily kept in the fridge keep it sealed in an airtight container so that the meat does not dry out. You can keep the leftover Au Jus also in a separate airtight container to just reheat when ready for another sandwich! The beef will be good if kept in the fridge for up to 4 days.
These Leftover Prime Rib Beef Dips are made with a little extra flair by adding garlic butter to the bun, this gives the beef dip a little extra richness and depth of flavor, and it’s well worth it!

Leftover Prime Rib Beef Dips
Ingredients
- 12 slices prime rib (slices should be as thin as possible)
- 1 package au jus mix
- 4 French rolls
- 1/4 cup butter
- 1/2 teaspoon garlic powder
- 8 slices Swiss Cheese
Instructions
- Prepare the au jus packet according to the instructions. Once done, keep warm on low heat on the stove. Turn your oven on to broil.
- Slice the rolls through the middle, but not slicing all the way through. Leave one part of the bun attached so it can hold the meat and cheese.
- Combine the butter and the garlic powder. Slather each cut side of the rolls with the garlic butter. Place on a cookie sheet, butter side up.
- Broil the buns until the butter is browned and the edges crispy. Remove from the oven.
- Take the beef slices and place them into the still hot au jus. Make sure that the meat is submerged. Heat in the au jus for 2 minutes.
- With a pair of tongs, remove the meat slices, letting excess au jus drip back into the pot, and divide between the 4 rolls evenly.
- Top each bun with 2 slices of Swiss cheese. Return to the oven and broil until the cheese is melted. Remove and plate.
- Split the au jus into four small bowls and serve with the beef dips.
Notes
- Portuguese rolls that are longer also work. The bread needs to be a dense, thickly crusted bread to hold the sandwich together while dipping.
- If desired, add horseradish to the rolls after you browned the butter on top. Then add your beef and continue making them.
