My Irish nachos are a fun twist on the typical restaurant-fare tortilla chip nachos: crunchy kettle-cooked potato chips are loaded up with hot, fried corned beef strips, some typical nacho vegetable toppings are sprinkled on, and warm homemade beer cheese sauce is drizzled over the top for a fantastic appetizer!

Potatoes as the Base

Irish nachos are based on using potatoes (because they are synonymous with the Irish, of course) for the base of your “nachos” instead of tortilla chips. I didn’t have the patience to roast potato slices, and honestly, that doesn’t scream “party food” to me!

So potato chips were the answer, and they have to be the harder kettle-cooked potato chips to be strong enough to hold toppings.

The Beer Cheese Sauce

The beer cheese sauce is the best part of these Irish nachos, but don’t worry, it’s a simple recipe! The flavor that it adds to this appetizer can’t be skipped!

You can play around with other types of beer, truly Guinness, for a more authentic Irish experience and a darker depth of flavor from the stout.

Play Around with the Toppings

The fried deli-style corned beef strips are a must if you are going to call these Irish nachos, and I also love it because it’s SO frugal to use on top of these compared to beef or chicken. You can use shredded meat leftovers if you make traditional corned beef and cabbage as well!

The tomatoes, olives, and onions are paired well flavor-wise, but you can add cooked bacon, sausage, or whatever your heart desires!

These were SO good!! Make sure that you split up the beer cheese into smaller dipping containers for everyone to have personally for dipping, and give this a try for St. Patrick’s Day!

Irish Nachos

Ingredients 

  • one batch beer cheese sauce
  • 300 grams potato chips plain salted, kettle-cooked
  • 175 grams cooked corned beef deli-style shaved
  • cup diced green onions
  • one large tomato diced and drained well
  • ½ cup sliced black olives drained well

Instructions

  • Get out a large serving platter and place the potato chips in a pile on the platter.
  • Prepare the cheese sauce and keep it warm.
  • Chop the corned beef into smaller strips or pieces.
  • In a frying pan over medium heat, quickly fry the corned beef until heated through, and crisped up in places.
  • Sprinkle the corned beef on top of the plated chips in an even layer. .
  • Drizzle a cup of the cheese sauce on top. Pour the remaining cheese sauce into smaller personal bowls for dipping.
  • Top with green onions, diced tomato,and black olives.
  • Serve immediately.
