It’s busy around these parts, with the house selling, the yard cleaning and the kids a’ schoolin’, preparation of food has to be quick. Especially for my lunch, there is never time to fuss about for 30 minutes preparing a masterpiece.

So I have started a new category on the site, Fast Food. It seems that all we are eating lately is literally fast food, just not in the sense of the mass marketing of that word. It’s healthy food we are fitting into our crazy schedule.

It’s a lot of salads, lots I tell you.  This was one I whipped up for lunch spur of the moment because I had everything on hand and I was tired of plain tuna on spinach.

Ah curry, my fallback spice when everything is dreary and sad, or tastes the same as usual. There are many tuna curry salad recipes out there but this one is as simple as one can get.

Most curry salads have chopped celery, various seasonings added, minced onions perhaps or a little relish for sweetening added. This is as fast and plain as you can get. If you want to try adding your favorites go right ahead! There are so many ingredients you can add and later on I will be tackling a more complex tuna curry salad.

If you like, add more mayo to your liking, I prefer mine dryer.

This one has no mincing, no dicing just plain ol’ whip it together and eat a perfect lunch for moms on the go.

And the grapes are so fabulous with the curry – instead of the usual raisins- that I may never go back to raisins again!

You can whip this up in less than 5 minutes and it doesn’t taste like a boring salad, it’s a keeper.

This simple salad is for those times when you have NO time but still want to toss together something radically healthy and tasty.

Curry Tuna Salad With Grapes

Ingredients 

  • 2-3 cups baby spinach washed organic
  • 2-3 tablespoons light mayonnaise
  • 1 teaspoon curry powder
  • 1 cup grapes sliced
  • 3 ounces light tuna packed in water

Instructions

  • Drain your tuna and mix with the mayo and curry until the curry and mayo is spread evenly through.
  • Place the spinach on a plate, then dab the tuna mixture over the leaves. 
  • Sprinkle the grapes on top and enjoy.
