Chicken Cacciatore served over wild rice

I am going to start building an Ark, very soon, if the rain doesn’t stop. I wonder if Edmonton is going to officially have a monsoon season declared as part of the year, because the deluge that is coming down today is atrocious.

The good side to all of this is we get  break in the weather to cook during the summer time. Dishes that are usually regarded as winter foods can be pulled out of the archives and made.

If only to heat up my chilly darn house with the oven!

Today I am making a new soup, another lentil one, because it’s just that kind of day around here. I am fighting off my daughters cold the past few days, spending far too much time in the van driving the kids to summer camp – this from the woman who drives them to school daily, so it MUST be a heckuva drive for me to complain!- and haven’t slept properly all week for Lord knows what reason.

So while that soup is simmering in the crockpot, I thought I would come up with some recipe suggestions for everyone today who has a chilly rainy summer day to contend with.

Above is my Chicken Cacciatore served over wild rice. Put it in the crockpot and leave it until supper tonight, yum!

Always on the list is my Spicy Lentil and Chickpea soup, my favorite way to pack protein into my son and indeed, a much loved family favorite.

Pot roast, anyone? Don’t mind if I do. It’s so dang chilly today that your oven on for 9 hours will only give the house some much needed warmth!

And as soon as I revisited this recipe, I am kicking myself for not picking up the ingredients. This is comfort food at it’s very best.

And we can’t forget the sweets and treats!

For a lighter, low fat muffin that still tastes amazing, try my Lemon Blueberry Muffins.

Smartie Oatmeal cookies. How can you NOT be cheered up by these colorful beauties? Now that Smarties uses all natural dyes, pair them with oatmeal in these ginormous cookies and you have one heckuva great rainy day snack.

Oh my gawd, what I would do for some hot out of the oven, gooey Monkey Bread right now. Seriously. Homemade light, puffy sweet dough baked into a ring of brown sugar cinnamon raisin bliss.

Sniffle. I just made myself sad because I am seriously too tired to make this right now. Sunday morning this sucker is MINE!

And of course, if you are stuck at home with the kids, stuff some cookies! This isn’t just baking, this will occupy your children and then some. Because what it better than basically “crafting” with food then eating it?

Now that my soup is on, this post is written and the kitchen cleaned, I am off to catch up on True Blood and perhaps have a nap.
