White Chocolate Cream Pie

Well, hello back to school week. Hello to no more sleeping in, cranky kids from lack of sleep and general tiredness of having to go a full day without flopping on a couch after lunch and forgetfulness galore. Oh ,especially the forgetfulness!

Like how I forgot this pie.

How I keep forgetting I have to pack lunches and find myself doing it at 9:30 at night.

How I forget that staying up past 10 makes me really cranky when I have to get up at 7. I like my sleep. A LOT.

Most importantly, how I forgot to bake a pie this week and write it up for PieDay.

So this was just sheer invention, laziness and having these ingredients on hand. Actually, I had an open bag of white chocolate chips and was vowing to use them in something.

Here’s that something.

Rich and decadent white chocolate cream pie.

Ingredients Needed For White Chocolate Cream Pie

  •  white chocolate chips
  •  milk
  • cream
  •  corn starch
  • egg yolks
  •  salted butter
  • Crust
  • graham wafers
  • melted butter
  • whipping cream
  • white sugar
  • almond flavoring

How to Make White Chocolate Cream Pie

  1. In a large saucepan over low heat, whisk together the cream, milk and cornstarch. Add in the white chocolate chips and melt completely making sure to stir constantly. Beat your egg yolks then add some of the hot mixture to the egg yolks and mix it in quickly to temper it. Once that is done, add the egg yolks into the hot chocolate mixture, whisking thoroughly and completely. Cook until thickened and this does really thicken up. Once you have a lovely thick mixture, whisk in the butter until it’s melted.
  2. Set aside to cool while you make the crust.
  3. Take your crust ingredients and press into a 9 inch pie plate. Bake in a 350 degree oven for 10 minutes. Remove from oven and cool.
  4. Take your slightly cooked white chocolate filling and pour into the prepared crust. Cover with Saran Wrap and refrigerate.
  5. Right before you are ready to serve, whip the cream using beaters. Cover the surface of the pie with whipped cream and serve.
  6. I did garnish with white chocolate chips for the picture but I like to eat it without. The almond flavoring is an absolute must have, it is a perfect match in the whipped cream to add another dimension to the taste. You can make it stronger if you like. Nothing goes together better than white chocolate and a cherry taste!

This was fabulous! I am a chocolate hater but love white chocolate. My SO says it tasted like a dessert you would get in a restaurant. It was so easy to make too!!5 stars

I have no clue why no-one has left a comment. It is probably because no-one loves white chocolate more than my husband and he demanded that I write this to thank you dear Author!!

My first cream pie came out amazing according to him and he did not even know that white chocolate cream pie was a thing.

He prefers this recipe over anything! Thank you!5 stars

I don’t see the almond extract either in the instructions. It may be to flavor the whipped cream topping.

Could you add the chocolate at the end instead?
