I have a confession to make.

I broke one of my cardinal baking rules this past weekend and made a dessert with bacon.

I’m pretty vocal in my opinion that I’m kinda over the bacon-on-everything craze, especially desserts. I think I am even quoted in an interview saying that bacon needs to get off my desserts and back onto my plate!

Apparently I like to eat crow, too. Yum, yum.

I love bacon, don’t get me wrong, I just hate being besieged by the latest food craze and the bacon on everything craze has nicely slowed down, thank goodness, to the point where we can enjoy bacon again without being so darn trendy.

I fooled around with bacon on no less than two desserts this past weekend. 

I just had this weird, crazy longing to do it that has never happened before. I seriously needed to put bacon on everything.

Is that a disorder? Is there a name for that?

This is another fantastic, easy two ingredient skillet cookie, perfect for camping.

You need:

  • a tube of pre-made chocolate chip cookie dough
  • 5-6 slices of bacon (maple flavor is the best!) cooked and crumbled
  • one cast iron skillet

Yes, it’s that easy. Man, do I ever love cheater camping baking!

Remove the cookie dough from the packaging and press into the bottom of the cast iron skillet, spreading it out evenly on the bottom.

Press the crumbled bacon onto the top of the cookie dough, scattering it evenly across the surface.

Let’s just take a moment here, shall we?

The main reason I could never become a vegetarian is right here folks, those crispy little bites of bacon heaven.

Bake in a 350 degree BBQ  (or trailer oven) for 17-20 minutes, watching it carefully to see when the cookie finally reaches a beautiful golden brown.

Eat.

And eat.

And eat and eat and eat.

The remaining cookie in this picture was gone seconds after I shot the picture. I wanted to show how beautifully it slices up, into little pizza shaped bacon chocolate chip cookies.

This was fabulous, I’m not even going to lie. While it’s not something I am going to make all the time and I still do think that the bacon on everything is overdone, this is just the ultimate camping treat. The maple flavored bacon is the best, adding another taste dimension and the salt from the bacon? Absolutely amazing.

So now, this very moment after years and years of writing this website, I have finally posted a dessert using bacon.

And it was good.

  • Remove and cool for a few minutes, then slice and enjoy!
