How to Make Rainbow Bit Cake Mix Cookies

These cookies need three simple ingredients:

  1. A box of Rainbow Bit Cake Mix
  2. Milk
  3. Eggs

Combine the three ingredients in a mixing bowl, scoop out the dough, place it on cookie sheets, chill, and bake. It’s that easy!

Karlynn’s Tips

I recommend cooling these in the refrigerator for approximately 10 minutes prior to baking. This will ensure the cookies do not spread out too much. If you skip this step, expect them to spread out on the cookie sheet quite a bit.

Freezing the Cookies

To store these cookies, you can place them into a freezer-safe container with a lid and freeze for up to 3 months.

Ingredients 

  • 1 box Rainbow Bit cake mix
  • 1/2 cup butter softened
  • 2 large eggs beaten

Instructions

  • Preheat oven to 350 °F.
  • Combine the ingredients together in a medium mixing bowl until completely mixed together.
  • Place on a parchment lined cookie sheet approximately 2 inches apart using a small cookie scoop.
  • Cool in the refrigerator (or outside if you live in Alberta) for 10 minutes. The cookies will spread out too much if you skip this step.
  • Cook for 8-10 minutes, until the edges are cooked and the middle is set.
  • Remove from the oven and cool on baking sheets completely.
