That’s right, if you are looking for a recipe for meatloaf. This is it. Meatloaf with mozza cheese and topped with bacon. You guys don’t like comfort food by any chance, do you?
This is another recipe creation for all of my low-carb-eating family members. I’ve complained talked before about the varied diets of my family members ( vegan to low carb to hates all vegetables….) and how hard it can be at family gatherings to make people happy. To be honest, low carb might even be the easiest to do out of all of them because of meat and cheese. I mean, it’s hard to go wrong with meat and cheese baked in a pan.
This was some SERIOUS comfort food. Eat this now while you are putting on your winter weight because well, it’s meat and cheese and bacon. Which, by the way, is utterly amazing cold the next day in a sandwich.
Is anyone else here a meatloaf sandwich lover? Oh, man. I LOVE them. I will choose them if I ever see them on a restaurant menu (which is basically never, except the Downtown Diner in Fort Saskatchewan here in Alberta) and they are my favorite sandwich. Other than my Mom’s egg salad, of course.
Just take a gander at how amazing that bacon crisps up on the top.

So next time that you are hankering for a crazy meatloaf that is absolutely OVER THE TOP, this would be it. This was some super serious comfort food and like I said, it’s not fancy tasting by any means. It’s a simple, good meatloaf that will stick to your ribs and be amazing in sandwiches the next day!
And no, I didn’t use breadcrumbs and to be honest I don’t usually use them unless I have run to the store and purposefully bought them for meatloaf. My meatloaf’s hold together with mainly eggs!

Bacon Topped Mozza Meatloaf
Ingredients
- 1 1/2 pounds ground beef
- 1/2 pound ground pork
- 2 tablespoons milk
- 3 tablespoons ketchup leave out for super low carb
- 2 large eggs
- 1 white onion diced
- 1 tablespoon Worcestershire sauce
- 1 cup shredded mozza
- 5 slices bacon
Instructions
- Pre-heat your oven at 350 F.
- Combine all ingredients together.
- Press into a loaf pan. Place the strips of bacon across the top of the meatloaf.
- Bake in the oven for 50-60 minutes, until the middle of the meatloaf reaches a temperature of 165 minimum.
