This cool and zesty summer berry fruit salad is a PERFECT refreshing snack for those hot summer days. And it’s super healthy too!

This is an old 70’s method of making a salad that uses an orange juice dressing that I’ve updated to use honey – and it’s SO much better with honey than with white sugar!

Summer Berry Fruit Salad

This simple summer berry fruit salad is easy to make, nutritious, and perfect for parties, picnics, and barbecues in those hot summer months! Been invited to a potluck last minute? This is your go-to contribution.

Almost everyone will love this quick and easy side dish/dessert/snack and you can whip it up in minutes, so it’s a win-win! The vibrant colors in this salad make it look super appetizing and looks definitely don’t deceive in this case.

I especially love to serve it with my blueberry yogurt pancakes for a deliciously decadent and filling quick fix of yumminess!

Summer Berry Fruit Salad Ingredients

This summer berry fruit salad is really easy to put together and you only need a few ingredients that you probably already have in the kitchen – especially if you’re a smoothie lover like me!

Honey Orange Sauce

  • Orange juice
  • Lemon juice
  • Melted honey
  • Orange zest
  • Lemon zest

Fruit Salad

  • Watermelon – cubed.
  • Blackberries, Strawberries, Blueberries, Raspberries – fresh is best!
  • Mandarins – you’ll need orange segments.

How to Make this Summer Berry Fruit Salad Perfectly

  • Combine the ingredients of the sauce in a small saucepan. Bring to a simmer. Remove from the pan and cool completely.
  • Place the fruit in the trifle bowl in the order listed, starting with the watermelon. Make sure the fragile berries go on top!
  • Pour the cooled sauce evenly over the top.
  • Cover and refrigerate the salad for a few hours.
  • Serve!

  • You can also use pineapple chunks, kiwis, and bananas to give this fruit salad even more variety!

How to Keep Fruit Salad Fresh

The last thing you want is for your fruit salad to turn brown and this can definitely happen if you add some bananas to the mix. To keep your summer berry fruit salad fresh, coat it with some lemon or orange juice (or any kind of acidic juice) and store it in an airtight container in the refrigerator where it will keep for 1-2 days. THEN add on the dressing right before you serve! ( note : everything is better fresh, and watermelon does NOT last!)

How to Cut Strawberries for Fruit Salad

It’s super easy to cut your strawberries like a pro once you get the hang of it! First, pick the green tops off each strawberry and cut the lighter colored top part off, then turn each strawberry upside down and cut down the middle. To make quartered strawberries, turn the strawberry over and cut down the middle again!

If you’re prepping for a party, it’s better to slice your strawberries. To get slicing, just turn each berry on its side and slice thinly from the top to the bottom. Easy!

I am literally eating this all summer. If summer ever gets here. It has been seriously crappy for weather around here, it was 4 degrees above freezing the other day and Calgary ( south of us) got SNOW. IN JUNE. Ingredients 

Honey Orange Sauce

  • 2/3 cup orange juice
  • 1/3 cup lemon juice
  • 1/3 cup melted honey or to taste
  • 1 teaspoon orange zest
  • 1 teaspoon lemon zest

Fruit Salad Ingredients

  • 2 cups cubed watermelon drained on a paper towel
  • 1 pint fresh blackberries
  • two 10 ounces cans mandarin orange segments drained well
  • 1 pint fresh strawberries washed and sliced
  • 1 pint fresh blueberries
  • 2 half pints fresh raspberries

Other Fruit Layer Options

  • pineapple chunks
  • kiwis
  • bananas

Instructions

Honey Orange Sauce

  •  Combine the ingredients of the sauce in a small sauce pan. Bring to a simmer, making sure that the ingredients are combined well. Remove from the pan and cool completely. Alternatively, you can heat this in the microwave in 30 second intervals, stirring after each interval.
  • Place the fruit in the trifle bowl in the order listed, starting with the watermelon. The fruit has been ordered so that the ones that stand up the best are on the bottom, and the fragile ones ( raspberries) are on the top! This is important for a fruit salad that holds up! 
  • Pour the cooled sauce over the top evenly, letting it soak through the layers. 
  • Cover and refrigerate the salad for a few hours. 
  • Serve with a large serving spoon.

    enjoy asparagus with cheese sauce on toast-add sliced hard boiled egg sliced across asparagus toast before adding sauce if desired-optional-cheese sauce can be made with store bought sauces or your own recipe-DO NOT SCORCH SAUCE-curdles -throw it out and start over. needs continuous stirring till done and then simmer for 3 minutes and continue whisking-enjoy
