This Greek avocado salad is super healthy, delicious, easy to make and will use up those avocados that are just about to be overripe on your counter, the best of all worlds! This was whipped up because yes, those avocados of mine were just on the edge.
This tastes similar to my Greek Salad with Homemade Greek Salad Dressing but is so much easier to make. I don’t bother with the homemade dressing; a splash of olive oil and lemon juice with some Greek seasoning is all you need.
Avocado Salad
This salad was all about using up avocados with what I had at home, on hand, to make sure that the avocados didn’t go to waste. I always have red onion, tomatoes and cucumbers as Greek salad is a weekly meal in our house. I didn’t have the energy to make up my homemade Greek dressing and to be honest, an olive oil based dressing is going to make an avocado salad SO oily it will be unpalatable. Thus the only the smidgen of olive oil and a larger amount of lemon juice with the Greek seasoning for the dressing.
Avocado Salad Ingredients
Oh yah, those avocados of mine were on their last legs, that’s for sure. I have had questions about the Greek seasoning that I use and thought that I should share a picture of the bottle. I usually have two of these bottles going at one time, as we are always paranoid that we will run out so we do that whole “order groceries without looking in the pantry” and always buy Greek seasoning. I was being truthful when I told you that we eat Greek salad at least once a week in our house!
All you need for ingredients are:
- avocados
- cucumber
- tomatoes
- lemon
- feta
- Greek seasoning
Turn this Salad into a Meal
This is a heavier salad thanks to the avocados, but it still doesn’t fill up my teenage son (but of course). We usually make grilled cheese or some garlic toast to add some carbs, but it is SO easy to make this into a meal. Just add some cooked cold pasta or orzo, just like my Greek orzo salad and my Greek pasta salad.
No Olives?
You can add olives, and I do have olives in my pantry (I have 7 jars of pitted Kalamata olives because I can only find them at Walmart, and I avoid going there at all costs, even when there isn’t a worldwide shutdown) but I didn’t want to add them. Like I limited the olive oil, I limited the olives and left the avocados to be my healthy fat in the salad. Throw some in and see if you like them, it’s up to you!
This recipe is really about using what you have on hand and reducing food waste in your house. I always try to have Feta cheese and Greek seasoning on hand. You would be amazed at how those two ingredients can turn a random assortment of veggies into a delicious salad. I have also used that Greek seasoning on my grilled eggplant. It really is a staple in my pantry.
Hows everyone hanging in there? I hope you are all staying safe and healthy!
Love,
Karlynn
Greek Avocado Salad
Ingredients
- 2-3 large avocados pitted, peeled and cubed
- 1 large English cucumber washed and chopped into small wedges
- 2 medium tomatoes sliced into small wedges
- 10-12 thinly sliced red onion rings sliced in half
- 1/2 cup Feta Cheese cubed
- 1-2 tablespoons olive oil
- 3-4 tablespoons lemon juice
- 2 tablespoons Greek seasoning
Instructions
- Combine the cucumbers, tomatoes, onion, and Feta cheese. Toss together until mixed.
- Add in the avocados, then the olive oil, lemon and Greek Seasoning. Toss gently, and add more lemon juice and seasoning to taste.
- Serve right away.
Notes
- Leaving the avocados until the end helps them not get mushed into the salad, and the cubes hold their shape better
- You can add olives, I found that I didn’t want any more high fatt rich ingredients since there is SO much avocado in the recipe, but it’s up to you!
