Roasted broccoli is super easy to make for an incredibly delicious, healthy, and fast side dish using this simple recipe. One of the biggest fallacies about food is that broccoli doesn’t taste good – and that we all hated it as kids. Not true with my family, everyone has always loved broccoli, so I still whip it up for them now and again for them.

Far too many people grew up with microwave steamed broccoli, and other healthy vegetables, the method rendering them fairly tasteless and without a good texture. Cooked properly, there is an incredible amount of tasty flavor hiding in broccoli that makes them perfect as a side dish!

Even when you do nothing more to them than roast them in an oven, broccoli can get crunchy and delicious as long as you don’t overcook it. It take barely any more prep time than putting them in a dish to microwave!

Ingredients for Roasted Broccoli

  • Broccoli florets
  • Olive oil
  • Salt & pepper

How to Make Roasted Broccoli

This recipe is super simple and is really just cooking your broccoli in a more flavorful way than most other methods!

  • Drizzle olive oil over your broccoli on a baking sheet and season liberally with salt and pepper
  • Thoroughly toss the pan to coat, and then bake for 15 minutes until the broccoli begins to brown.

What Makes Roasted Broccoli Special?

The reason this roasted broccoli recipe is so special despite its simplicity is that it is such a departure from the conventional methods of cooking broccoli. We all grew up with steamed or boiled veggies for dinner, and the memory of those mushy, unappetizing pieces of greens still haunts us LOL!!

By roasting in an oven, broccoli takes on a crispy, almost caramelized texture and flavor and is impossibly tastier than any other way to prepare broccoli.

Don’t Overcook!

Just like a lot of other similar vegetables, broccoli does not respond well to being overcooked. If cooked properly, the surface should be just turning brown, and the flesh of the broccoli itself should remain tender.

If you overcook it, though, you can expect to find the broccoli to be soft and almost mealy, very similar in texture to boiled veggies.

So make sure you are careful not to overcook your broccoli – stop just as soon as you start to see it turn brown.

Ingredients 

  • 6 cups broccoli florets
  • 2 tablespoons olive oil
  • sea salt
  • cracked black pepper

Instructions

  • Preheat your oven to 425 °F.
  • Place the broccoli florets on a large rimmed baking sheet.
  • Drizzle the olive oil over the top of the broccoli then sprinkle with salt and pepper. ,
  • Toss the broccoli on the pan to coat with the olive oil and salt and pepper.
  • Bake in the oven for 15-20 minutes, turning halfway through, until the broccoli starts to brown around the edges.
  • Remove from the oven and serve.

Notes

  • You can top the broccoli with any of your favorite seasonings!
