There is nothing on this earth that goes better with roast beef than Horseradish sauce! Spicy, creamy, and just a little bit sweet from the prepared horseradish if made properly, this almost overpowering sauce is an absolute necessity if you are planning a big meal with beef.
This would go excellently with any kind of classically prepared Beef dish, or as the key ingredient for some Horseradish Guacamole! Now that I’ve made this I know that my Dad will be requesting this for Christmas dinner, he’s the horseradish lover in our family!
Horseradish Sauce
Horseradish sauce is actually different from regularly prepared horseradish, and you definitely do not want to accidentally confuse the two. While Horseradish sauce is creamy, rich, and well balanced, if still rather hot, regularly prepared horseradish is bitter and almost unbearably hot.
It is sort of like the difference between tasting some hot sauce and biting down on raw chili pepper.
While you can certainly use regularly prepared horseradish as a topping for a few different recipes, the best way to enjoy it is mixed together with plenty of sour cream, mustard, and lemon juice like in this recipe.
Ingredients for Horseradish Sauce
- Sour Cream
- Horseradish
- Lemon juice
- Dijon mustard
- Chives
- Salt & Pepper
- Parsley (if you’d like a photogenic garnish)

This addition is specifically for my Dad and all of the other garlic lovers – add in 1 minced garlic clove to the sauce! Nothing beats a creamy garlic horseradish sauce with your favorite roast beef!!
How to Make Horseradish Sauce
Making horseradish is as easy as mixing everything together in a bowl and storing it tightly in the fridge.
The most important thing to remember is that you must adjust all the seasonings to your preference. I’m sure my dad would add extra horseradish, and Dijon. You might like less of each. The thing to remember is that when it comes to sauces, you need to adjust them to YOUR liking!
However, don’t even think about trying your horseradish sauce until at least a day has passed. The incredibly pungent, bitter flavors of the horseradish in the sauce take a little while to mellow out and mix with the other flavors. So, for the best experience, make this sauce the day before you want it.
How to Store Your Horseradish Sauce
As this sauce needs a little while to age and develop its flavor, it is best left alone in the fridge in a tightly sealed container. There shouldn’t be any separate of this sauce when you take it out of the fridge, except for a little bit of runny, watery liquid that might collect on the top.
Not to worry, though, as this is just a little bit of water from the sour cream. This can easily be poured away into the sink with no damage to your Horseradish sauce.
What to Use Your Horseradish Sauce With
Horseradish sauce is a little bit dangerous if you aren’t careful – it is deceptively potent, burning your tongue and leaving you gasping for a drink of water so make sure you take it easy to start lol!
Despite the burning sensation it causes, it somehow manages to taste soooo incredibly good! Just like how the best hot sauces help contrast flavors with certain foods, so too does Horseradish work really well with things like beef.
You can use it as a condiment when enjoying some roast beef or even use it as an ingredient in other recipes. You could combine it with some mayonnaise and end up with a much spicier mayo-based dip for French fries, or you could use it to add a touch of spicy richness to soups.
Try it with my eye of round roast recipe, my herb and garlic bottom round roast or my sirloin roast recipe.

Horseradish Sauce
Ingredients
- ½ cup sour cream
- 2 tablespoons prepared horseradish
- 1/2 teaspoon lemon juice
- 1/2 tsp Dijon mustard
- 1 tablespoon minced chives
- salt and pepper to taste
- parsley to garnish if desired
Instructions
- With this recipe, you are going to need to add the ingredients slowly, adjusting to your own liking. Start with half the amount of horseradish, then add until you find it's perfect. Remember that it will mellow out some overnight, but not too much!
- Add in the lemon juice and mustard to your liking as well. Then add the chives, salt and pepper and then combine everything well once you are satisfied with the taste.
- Store in a closed container in the refrigerator for up to 3 days. The flavor improves with the longer it refrigerates.
Notes
- If you find this sauce slightly “flat” add in a wee bit if sugar. Some prepared horseradish have more sugar than others.
- This will yield around 11 tablespoons, each serving size is one tablespoon

Made this to use for roast beef hoagies. We loved it. I make deviled eggs using horseradish with mustard and Mayo. Everyone loves them, next time I’ll make this to make my deviled eggs and see how they come out.
