Carrot raisin salad? Yes! Some ingredients just work well together, even if it doesn’t seem to make any sense. This recipe for carrot raisin salad is a prime example of that; none of these ingredients should work well together, yet somehow they manage to taste great in the right proportions.

Carrot Raisin Salad

This retro salad is a love it, or hate it recipe. Either you are going to “get” the flavors, or you won’t, and that’s okay! It’s sweet, yet savory, and odd and delicious if you like the ingredients! I use oranges in mine instead of pineapple, which is what a fast-food chain uses, the choice is up to you!

This carrot raisin salad utilizes not only mayonnaise and lemon juice to provide a tasty dressing but also fills it out with orange and raisins to lend it some really nice sweetness. It is one of those dishes that doesn’t seem like it contains any vegetables at all, despite being packed with nutrients.

Carrot Raisin Salad Ingredients

  • Raw grated carrots
  • Raisins
  • Orange (we use oranges in ours, the famous Chick Fil A version uses pineapple tidbits)
  • Mayonnaise
  • Lemon juice
  • White sugar
  • Salt & pepper

How To Make Carrot Raisin Salad

  • Place the carrots, raisins and orange pieces in a medium bowl.
  • Combine all of the dressing ingredients together in a small bowl. Taste test to see if you need more sugar or lemon juice.
  • Add to the other ingredients and mix until completely combined
  • Refrigerate until serving

Types of Raisins You Can Use

While you could just buy whatever raisins you find first at the store, there are actually a whole host of different raisins available to choose from.

The most basic, readily available type would be the classic black raisins you can find in those tiny cardboard boxes. These ones are very sweet and will make your carrot raisin salad especially sweet and almost like a dessert.

For a more fruity, tangy flavor, try looking for golden raisins instead.

Golden raisins have been treated during drying to avoid darkening and have a much more tangy, aromatic flavor profile than regular black raisins.

In fact, you can even find red or green raisins if you feel so inclined. Just make sure that you are buying the right kind of raisins that give you the flavor you like; some people prefer it sweeter, others with a more caramel tanginess.

Make This Instead Of Regular Coleslaw!

This recipe is pretty similar to most examples of coleslaw that you can find in the USA, so why wouldn’t you just make some coleslaw instead of this?

The main benefit of this carrot and raisin salad over coleslaw is the fact that it is necessarily a bit healthier thanks to the carrots, but it is also a bit sweeter as well.

While coleslaw is made up of decently healthy cabbage and can sometimes be quite sweet, this carrot and raisin salad is both sweeter and more nutritious.

If you struggle to get your family to eat their vegetables, this might be the perfect way to sneakily get them to get a few carrots with dinner.

Ingredients 

  • 1 1/2 cups raw grated carrots
  • 1/2 cup raisins soaked in warm water until plump, then drained
  • 1 large orange peeled and cut into small cubes SEE NOTES

Dressing Ingredients

  • 1/4 cup mayonnaise
  • 1 tablespoon fresh lemon juice
  • 1-2 teaspoons white sugar

Instructions

  • Combine the first three ingredients in a medium bowl.
  • In a small bowl, add the dressing ingredients. Mix until combined. Taste test and see if you want it sweeter, or tangier at this point, and add more sugar or lemon juice.
  • Once the dressing is mixed, add to the other ingredients and mix until completely incorporated. Refrigerate until serving.

Notes

  • You can use a small can of pineapple tidbits if you like pineapple instead of orange sections in this. Drain the tidbits well, then mix in as you would the oranges.

    AWESOME!!!! I was raised on this. I’m here in Florida and no one has ever herd of carrot salad. I add raisins and craisins to mine. sometimes at Christmas I chop up some red and green cherries and toss them in there to make it festive. My entire family looks forward to it. It’s so good! I’m going to try the pineapple it sounds really good.
