Not everyone particularly likes salads; they are usually nothing more than a bit of wilted leaves and a few toppings, all mixed together with a rather placid vinaigrette.

This grilled chicken should hopefully change the mind of even the most reluctant salad eaters out there. It is packed with deliciously flavorful toppings, as well as a complex-tasting, yet super easy to make dressing as well.

How to Serve

Serve this salad as a filing, summertime lunch, or as a side salad for a larger and more elaborate meal with guests – it is bright, tasty, and surprisingly good for you as well!

Grilled Chicken Salad Ingredients

Make sure you look at the recipe card at the very bottom for the exact amounts so that you know exactly what to buy for this recipe.

• Grilled chicken breasts

• Romaine lettuce

• Cherry tomatoes

• Cucumber

• Red onion

• Bacon

• Feta or blue cheese

• Avocado

Dressing

• Dijon mustard

• Honey

• Apple cider vinegar

• Olive oil

• Garlic

• Salt & pepper

How To Make Grilled Chicken Salad

• Place all of the ingredients for the dressing in a small mason jar, and shake to combine, and set in the fridge until ready to use

• Prepare 4 plates or bowls and divide the lettuce between each

• Pour a drizzle of dressing over the lettuce on each plate

• Place the grilled chicken breast on top and your toppings placed around the tomatoes, sliced cucumber, bacon, cheese, red onion, and avocado

• Drizzle the remaining dressing over the chicken breast and serve

How To Make This Salad Extra Saucy

One common complaint about most salad recipes is the fact that they can tend to be pretty dry and lacking when it comes to dressing.

While most people only think of salad dressing as a way to help lubricate all of the leaves and ingredients in the salad, it also serves a vital flavor function. Most salad dressings contain a good amount of fat, as well as plenty of other flavorings.

This fat and tasty seasonings and spices give the whole salad some much-needed flavor, allowing for a way better tasting salad experience.

While this dressing should be plenty tasty, some might find that it leaves everything a little bit too dry, especially if you have particularly dry feta or blue cheese.

But not to worry; if you like your salad a little bit saucier, simply increase the amount of dressing you use! Other than the clove of garlic, all of the ingredients can be easily scaled up – if you just double the whole thing, you won’t even have to worry about trying to cut and prepare a clove and a half of garlic!

Increase the Sauce Just a Little Bit

If you just want to scale it up by a fraction, like if you wanted to increase the dressing by one and a half, still only use one garlic clove, but make up the rest of the garlic flavor with a little bit of garlic powder instead.

How To Stop the Salad Ingredients From Sinking To The Bottom

Making salads at home always seems like such a great idea – it will be bright, fresh, and healthy, and you just need to mix everything in a bowl. Sounds simple, right?

Well, anyone familiar with preparing salads at home will also be familiar with the dreaded pain of seeing all of their toppings and dressing at the bottom of the bowl, with only a bunch of leaves along the top. This means that the first few servings of a salad are mostly leaves and no dressing unless you really dig around into the bottom of the bowl first.

This happens because the toppings and dressing are heavier than the leaves, so, over time, they fall to the very bottom.

However, there is an easy way to get around this – you just need to change up when mixing your salad:

  • Instead of haphazardly mixing all of your ingredients together, wait until you are literally just about to serve your salad before you mix anything.
  • This allows for the dressing and toppings to become interspersed with all of your salad ingredients but does not give it enough time to fall to the bottom of the bowl accidentally.
  • Just stir it all up and then serve, and everyone should get an equal amount of toppings and dressing.

Ingredients 

  • 4 Grilled chicken breasts
  • 6 cups romaine lettuce (chopped)
  • 3/4 cup cherry tomatoes (sliced in half)
  • 3/4 cup cucumber (sliced)
  • 1/4 cup red onion (thinly sliced)
  • 1/2 cup bacon (Cooked and crumbled)
  • 1/2 cup Feta or blue cheese (crumbled)
  • 1 avocado (peeled, pitted and sliced)

Dressing

  • 2 Tablespoons Dijon Mustard
  • 2 tablespoons honey
  • 2 tablespoons apple cider vinegar
  • 2 teaspoons olive oil
  • 1 clove garlic (finely grated)
  • 1/4 teaspoon Salt (to taste)
  • 1/4 teaspoon ground black pepper (to taste)

Instructions
