How To Dry Out The Lemon Zest Easily
One particular part of this recipe that might confuse some people is the inclusion of dried lemon zest.
Most home cooks are comfortable and familiar with zesting a lemon and using it in their recipes, or at the very least buying it from a store, but not many people are comfortable making their own dried lemon zest.
However, it is actually super easy to make at home!

If you don’t happen to have an expensive dehydrator, however, you can also just use your oven.
Simply set your oven to the lowest temperature that it can reach and still be active on.
Pour all of your lemon zest onto a sheet of parchment paper on a sheet pan, and put that in your warm, but not hot, oven, and keep the door ajar.
As long as your oven doesn’t experience spikes of heat on the lowest setting, your lemon zest should be perfectly dried in just a couple of hours.
To check for doneness, simply take the tray out of the oven and shuffle the pieces around – if they are totally dried, they should crackle against one another on the pan, and they should also smell rich and lemony as well!
