Cheese Stuffed Meatloaf

 The meatloaf is the quintessential weeknight family dinner meal. Obviously super meaty, but juicy and supple as well, and ideally covered in a rich sauce, this is a reliable meal easy to throw together after a hard day’s work.

However, maybe a big pile of meat and some filling side dishes might not be what you are after – for more calories and perhaps a bit more richness, why not try adding cheese to your meatloaf?

While you could just grate some cheese over the top, why not try stuffing it into the meatloaf instead with this recipe for cheese-stuffed meatloaf?

Cheese Stuffed Meatloaf Ingredients

Make sure you look at the recipe card at the very bottom for the exact amounts so that you know exactly what to buy for this recipe.

• Bread

• Milk

• Ground beef

• Ground lean pork

• Egg yolk

• Minced onion

• Salt & pepper

• Dry mustard powder

• Sage

• Celery Salt

• Worcestershire sauce

Cheese Filing

• Egg white

• Water

• Bread

• Cheddar cheese (or blue cheese)

How To Make Cheese Stuffed Meatloaf

• Grease one loaf pan

• In a small bowl, prepare the cheese filling by mixing the egg white and water, and toss lightly with the bread crumbs and the cheese and set aside

• In a large-medium bowl, mix the bread and milk

• Add in all the other ingredients except for the filling

• Divide the meat into two portions and press one portion into the bottom of the loaf pan and cover with the cheese filling

• Top with the remaining meat mixture, flattening it out into an even layer

• Bake in the oven at 350 Fahrenheit for 1 hour and 30 minutes

• Cool for 5 minutes before serving

What Cheese Works Best For This Recipe

Trying to get cheese into different foods can actually be a pretty significant challenge. This recipe manages to cheat a little bit by making an egg white and water mixture that helps to bind the cheese into a sort of sauce.

This lets the cheese be pumped or pressed into the meat, slowly melting as it cooks and turning into an ooey gooey cheese layer.

This recipe uses cheddar to provide the requisite cheesiness, but you could absolutely use other types of cheese as well.

A stretchy, stringy cheese like mozzarella or Monterey Jack would work really well, though you would certainly lose a lot of flavors, as mozzarella doesn’t really have the best flavor on its own.

If you felt like splurging, or you just happened to live near a good Mexican grocery, you could pick up some Oaxaca cheese, which is a lot like mozzarella, only it has a ton of bonus flavor that mozzarella doesn’t have.

Regardless, this simple cheese sauce hack of using egg whites should mean that you can easily get your cheese into your meatloaf and end up with a melty, soft, and gooey cheese layer once it has cooked.

Do You Need To Use Both Ground Beef & Ground Pork For This Recipe

This recipe, like many others for meatloaf or meatballs, calls for the use of both ground beef and ground pork, something home cooks likely loathes, as it requires getting two different kinds of meat for one recipe.

There is a good reason for this, however; ground beef and ground pork taste really good!

Ground pork on its own definitely has too strong of a “porky” taste and can make a meatloaf made with only pork mince taste more like a sausage. Ground beef, meanwhile, would taste a bit too much like an overly large burger patty if you just used beef on its own.

Combining Meats Makes a Better Flavor

Combined together, however, they each contribute a flavor that mixes together and tastes fantastic.

Ground pork tends to be a lot fattier than even the fattiest ground beef, which helps contribute juiciness to the meatloaf, whereas ground beef provides the base meaty flavor and umami.

You absolutely could omit one of the meats if you were really pressed to, however. The taste wouldn’t be as good, but it would still get the job done.

If you just used ground beef, however, you might consider adding in a bit of extra fat, either in the form of something like lard or maybe even bacon grease, to help make up for the missing fatty richness from the ground pork.

If you just used ground pork, make sure that you are being careful not to overwork the meat mixture as you form it into a meatloaf. Ground pork has a tendency to sort of clump up and turn into sausage patties really quickly if you overwork it, which would totally ruin the texture.

Ingredients 

  • 3 slices Bread (torn into pieces)
  • 1 cup milk
  • 1 lb ground beef
  • ½ lb ground lean pork
  • 1 egg yolk
  • ¼ cup minced onion
  • 1 ¼ teaspoon salt

  • ¼ teaspoon mustard (dry)
