Chicken Patties

Chicken patties are often seen as a bit flavorless and paling in comparison to a good old-fashioned beef patty.

However, with the right handling, and a little bit of added fat for flavor, chicken patties can actually become an incredibly tender and delicious new mainstay in your burger rotation.

Plus, eating a little bit less red meat is generally good for everyone, so why not still enjoy it when substituting your red meat for while?

Can You Use A Food Processor For Mixing?

If you are one of those people who really dislike the feeling of raw meat, don’t let that put you off making these chicken patties. Rather than mixing the ingredients together with your hands, you could instead use a food processor to do all of the gross work for you.

Using a food processor does obviously mean that you are creating extra mess and cleaning up to do, but this is a small price to pay for not having to handle raw chicken!

If you choose to use a food processor, you are going to want to use the lowest setting or the pulse option in order to ensure that you don’t over-mix the meat.

You should also keep in mind that mixing in a food processor necessarily adds heat to your mixture, which can actually cause the chicken patties to slowly cook, so make sure to only mix it slowly and with small breaks in-between to give the mix a chance to cool down.

What Happens If You Over Mix?

A common instruction with any kind of meat patty is to avoid over mixing, for fear of turning the meat too tough.

The reason that you want to avoid overworking your chicken mixture is that this will cause the meat proteins to coagulate and connect together, turning the whole thing tough and ultimately leading to a chewy texture when cooked.

While some cuisines, notably most examples of Chinese cooking, actually want their meat to have a tough texture, something achieved by “Daa-ing” it by throwing it back and forth between the bowl and the chef’s hands, when you are hoping to make a regular cooked chicken burger, you want the texture to be a bit lighter.

So make sure to keep your chicken patties nice and light, as otherwise, they will start to turn horribly chewy and ruin the texture of your burger, no matter what you do to it.

Can You Prepare Your Chicken Patties In Advance?

Finding time during the week to cook an entire meal from scratch is not always easy.  So you might want to try preparing your chicken patties in advance so that all you have to do at the end of a busy day is cook them and enjoy them.

To prepare your chicken patties in advance, follow steps 1 to 3, and then rather than cooking them lay them out on a baking tray and cover with plastic wrap and store them in the fridge. If you know that your patties will be in the fridge for more than a day, it is a good idea to store them in a sealed container rather than an open tray to keep them fresh.

Ready-to-cook chicken patties will last for two to three days in the fridge. Alternatively, you could make a larger batch and store them in the freezer for several months so that you have chicken patties on hand whenever you want them.

To cook frozen chicken patties, the process is the same as it is for fresh patties with the only difference being that you will want to take them out of the freezer the day before to properly defrost. Store the patties in the fridge overnight and they will be ready to cook the next day!

Could You Adapt This Recipe To Use Other Ground Meats?

The great thing about this chicken patty recipe is that it can be adapted to use different meats. If you’re not in the mood for chicken or have a side that would pair better with pork, for example, there is no reason why you can’t use the same method to make pork patties!

Depending on your chosen meat you might want to make a few adjustments to the seasoning and ratios.

  • Ground Turkey

Another great, low-fat meat, ground turkey makes for the perfect substitute for chicken in this recipe. Simply substitute it on a 1 for 1 basis and you shouldn’t notice a difference!

  • Ground Pork

Ground pork is a great option if you are looking for a ton more flavor and fattiness, though keep in mind that it will necessarily be a lot less healthy than chicken!

  • Ground Lamb

Ground lamb sits almost in-between chicken and pork on the healthiness scale, and while it isn’t used nearly as much as other types of meat, ground lamb can actually make for a super juicy and tender patty!

Ingredients 

  • 1 Lb ground chicken
  • 1 large egg
  • 2 Tablespoons mayonnaise
  • ¼ cup onion (finely diced)
  • 2 cloves garlic (diced small, or more to taste)
  • 2 Tablespoons fresh parsley (finely chopped)
  • 1 pinch salt and black pepper (to taste)
  • ¼ cup all-purpose flour
  • ¼ teaspoon poultry seasoning
  • 3 tablespoons vegetable oil

Instructions

  • In a large bowl add the chicken, egg, mayonnaise, onion, garlic, parsley, salt, and pepper. Mix with your hands until just combined. Do not over mix as this can make them tough.
  • In a shallow bowl add the flour and poultry seasoning and mix well.
  • Divide the chicken into 5 or 6 portions and drop one portion at a time into the flour mixture rolling it around to coat all sides and shaping into a flat patty.
  • In a large skillet over medium high heat and add the oil. Cook the chicken patties for about 5-7 minutes per side until they are golden brown and a minimum internal temperature of 165° is reached.
  • Serve as a healthier alternative to chicken nuggets, serve with a salad, or they are even great in a bun!
