Sausage has a much softer texture than bacon and so will not provide that salty crunch when you bite into each forkful which is something to consider if you like textural variety when it comes to your food.
However, if you fall into the opposite category and prefer homogeneous dishes, then you have to try this recipe using crumbled breakfast sausage.
- Caramelized Peppers, Mushrooms, and Onions (Vegetarian option)
For a vegetarian-friendly option, you could try making this hash brown casserole using caramelized vegetables in place of bacon.
Most vegetables will work in your casserole; however, things like peppers, mushrooms, and onions tend to work best.
In place of cooking diced bacon dice your chosen vegetables and allow them to cook slowly in either butter or oil to caramelize.

Cheesy Hash Brown Casserole
Ingredients
- One 16oz Package frozen shredded hash browns
- 4 slices cooked crispy bacon
- ¼ cup melted butter
- 1 small onion (diced)
- ½ teaspoon garlic powder
- ⅛ teaspoon salt (to taste)
- ⅛ teaspoon pepper (to taste)
- ¾ cup shredded cheddar cheese
- ½ cup grated Parmesan cheese
- ⅓ cup half and half cream
- 3 Tablespoons hard butter (chopped into small bits)
Instructions
- Preheat your oven to 350°. Grease a 9 inch baking pan.
- Dice the bacon into 1/2 inch pieces. Cook the bacon until it is crispy. set aside on paper towel.
- In a large bowl mix the potatoes, cooked bacon, melted butter, onion, garlic powder, salt and pepper, cheddar and Parmesan cheese. Mix to coat and combine well.
- Add the potato mixture to the greased 9 inch baking dish.
- Pour the half and half cream over top, and dot with the hard butter on top.
- Bake for 55-60 minutes until the potatoes around the edges are lightly browned. Let rest for 5 minutes then serve garnished with chopped fresh parsley on top.

This sounds delicious — but I’m a little surprised you’re making it sound like Something Really New. This basic casserole has been around a long, long time. And you’re right, using different ingredients still makes it tasty.
It’s especially good for Christmas morning. Make it up ahead of time, put in the fridge or freezer — then slap that baby into the oven when you’re barely awake. Yum.

I shredded 2 large baked potaoes (Costco ones). I didnt have half and half so I used regular whole milk.
After 55 minutes in oven, I felt they werent cooked enough, so I put in for another 10 minutes (total 65 minutes). This gave the edges some crispies, which we we fought over!
We used pork sausage patties since we had no bacon.
This was delicious and we will make again.
