With the buttery sweetness of butterscotch chips and hints of brown sugar and vanilla, these cookies are always a great treat. Butterscotch chips are usually found in the baking aisle of your local grocery store next to the chocolate chips.

If you cannot find butterscotch chips, caramel chips are another great alternative.

There are few butterscotch recipes, and as it is one of my childhood favorites, I am always looking for more ways to enjoy this treat. One of my favorites is Oatmeal Butterscotch Cookies, as the oatmeal adds a great chewy texture that you can savor the cookies a little longer. Butterscotch Banana Bread is perfect with butterscotch chips instead of chocolate, and I am sure you will love it too!

How to Make Butterscotch Cookies

These cookies are so simple to whip up! Make sure to check out the entire recipe card for the in-depth steps to make this; this is just a summary.

  1. Cream the sugars and butter, and add in the vanilla.
  2. Add eggs one at a time. Add the flour mixture and mix.
  3. Stir in the butterscotch chips by hand.
  4. Drop a large tablespoonful onto the baking pan.
  5. Bake for 12-15 minutes until the edges are golden brown.

Karlynn’s Tips

  • You can substitute half of the butterscotch chips for chocolate chips
  • You can prepare the dough, roll it into balls, and freeze them for use later! Simply place the frozen cookie balls on a baking sheet, let them defrost, then bake according to the instructions.

How to Store Butterscotch Cookies

Storing these cookies is as easy as storing any other kind of cookie or baked good: Keep them in an airtight container at room temperature but away from heat. You can also freeze these cookies in an airtight container for up to 2 months.

Ingredients 

  • 2 1/2 cups all purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1/2 cup granulated sugar
  • 1 cup brown sugar
  • 1 teaspoon vanilla
  • 1 cup butter
  • 2 large eggs
  • one 270 gram bag butterscotch chips

Instructions

  • Preheat your oven to 375 °F.
  • Mix together the flour, salt and baking soda in a small bowl, set aside.
  • Cream the sugars and butter together until light and fluffy. Beat in the vanilla.
  • Add the eggs one at a time, beating each in thoroughly.
  • Slowly add the flour mixture, mixing in until combined completely.
  • When completely mixed, stir in the butterscotch chips by hand.
  • Drop by large tablespoonful onto an ungreased cookie sheet.
  • Bake for 10-12 minutes, or until the edges and bottoms of the cookies are browned. Remove and let cool on the sheets for 5 minutes, then transfer to a wire baking rack. Cool completely.

Notes

  • the better the quality of your butterscotch chips, the better the cookies will be!

    Look delicious! Could I add some oatmeal to them, maybe less flour ? What would you suggest ? Just trying to get some oats in, since that’s the only way my kids will eat it !
