Grilled Halibut
Halibut is another one of those fish that don’t really get the appreciation that they deserve from home cooks.
Usually only really served at restaurants and at boutique fish markets, halibut has the potential to be a really delicious, easy fish to serve for dinner, even without needing any kind of special occasion.
While there are other ways to prepare this fish, giving it a really high heat sear on a grill is probably the best, as it allows you to get all of those tasty browned flavors without overcooking the insides.
Grilled Halibut Ingredients

• Halibut steaks
• Olive oil
• Onion powder
• Dried parsley
• Dried dill
• Lemon pepper
• Salt
• Lemons
• Parsley
How To Make Grilled Halibut
• Preheat the grill for medium-high heat and oil the grate
• Brush the halibut steaks generously with olive oil on both sides
• Combine the onion powder, parsley, dill, salt, and lemon pepper together in a small bowl
• Season the oiled halibut steaks with the spice mixture generously
• Grill on the hot grill until golden, about 4 to 5 minutes per side
• Turn over once, cooking both sides but don’t turn more than that to avoid them falling apart
• Cook until it flakes apart easily or until an internal thermometer registers 145 Fahrenheit at the center of the fish
• Place the lemons, cut side down, onto the grill and grill until they are hot and have charred lines on them
• Once done, plate the fish and serve each with half a charred lemon and parsley for garnish
Do You Have To Use An Outdoor Grill For This Recipe, Or Can You Grill Indoors?
Grills are one of those handy coking devices that can produce a ton of delicious browned flavor really quickly.
However, for most people, grilling outdoors is a bit of a pain. First of all, you need to keep the grill maintained and stocked with charcoal, and when you want actually to use it, you not only need to wait for the charcoal to ignite but also for the grill itself to heat up as well.
There are gas grill alternatives available, which offer a quicker way to get hot cooking temperatures, but many decry its lack of flavor.
There is, of course, always the possibility of grilling inside instead.
While you certainly couldn’t fit a giant outdoor barbeque into your kitchen, no matter how big it is, you can find some indoor grills as a good alternative.
Whether they are a smoke injector combined with a hot griddle or a frying pan with built-in grill grates or crenulations, you can easily replicate the grilling experience and flavor if you remember to get the heat, really, really high.
Make sure you aren’t just using a regular non-stick frying pan for this, though, as otherwise, you run the risk of burning off the non-stick layer, which can actually be a potent carcinogen.
Stick to surfaces that have been specifically designed to tolerate high heat, and you should be fine.
What To Serve Your Grill Halibut With?
When it comes to preparing dinner, whether for a crowd at a party or just as a weeknight meal, side dishes tend to come easy: something starchy, something green, and a little bit of fat and salt, and you are usually good.
However, trying to come up with a side dish to serve alongside fish can sometimes like a pretty big challenge.
Fish can be difficult because it is generally not as filling as other meats or main dishes, which makes it seem like you would want an especially filling side dish, like a big plate of potatoes or something else incredibly carby.
However, most of the time, when you are cooking fish, you are probably in the mood for that bright, summery flavor and texture. You probably won’t want a giant side dish or an intensely filling plate of carbs.
Instead, try and serve your grilled halibut with a simple side salad – something light, enjoyable, and purely for flavor, without really much of a filling nature.
You might feel like it isn’t enough, but if you are in the mood for a perfectly grilled halibut, and after you have gone through all of the work to get a perfectly grilled piece of fish, you will probably want that light, airiness of a salad instead of something more filling.
Or just be a total carnivore and eat it on its own! Who needs side dishes, anyway?

Grilled Halibut
Ingredients
- 4 one inch thick halibut steaks
- 3-4 Tablespoons olive oil
- 1 1/2 teaspoon onion powder
- 11/2 teaspoons dried parsley
- 1 teaspoon dried dill weed
- 1/2 teaspoon lemon pepper
- 1/4 teaspoon salt
- 2 lemons cut in half
- fresh parsley chopped
Instructions
- Preheat the grill for medium-high heat and oil the grate.
- Brush the halibut steaks generously with olive oil on both sides.
- Combine the onion powder, parsley, dill, salt and lemon pepper together in a small bowl.
- Season the oiled halibut steaks with the spice mixture generously.
- Grill on the hot grill until golden, 4 to 5 minutes per side. Turn over once, cooking both sides but don’t turn more than that, it will fall apart! Cook until it flakes apart easily. Fish is done at 145°F.
- Move the halibut out of the flame if there is a flare up at any time!
- Once you have started cooking the fish, place the lemons, cut side down, onto the grill as well. Grill until they are hot and have charred lines on them.
- Once done, plate the fish and serve each with half a charred lemon and parsley for garnish.
