Here’s some kitchen science for you: by salting the ground sausage and then refrigerating it, the salt helps to break down the protein strands in the meat. This achieves the “gel” texture of sausage meat compared to plain ground meat. The meat will stick together in clumps that are more like sausage than just frying up the seasoned ground meat.

Homemade Italian Pork Sausage
Ingredients
- 1 pound ground pork
- 2 teaspoons Italian seasoning
- 1/2 teaspoon salt
Instructions
- Place the ground pork in a medium size mixing bowl and add the Italian seasoning and the salt.
- Mix until the seasonings are incorporated throughout the pork.
- Place the meat in a closed container and refrigerate for at least an hour before using. It can be stored in the refrigerator for up to three days before using.
- To freeze, portion out if needed – I like to do half pound portions – and freeze flat in freezer safe bags for up to three months.
