Malibu-based cocktails are super popular, especially in the spring and summer months. This particular one is not only visually stunning, it’s a great-tasting cocktail as well. It’s called Mermaid Water and it’s sure to be a big hit with whomever you are sharing it with or serving it to (including yourself!).

Mermaid Water
This is a great drink to make for friends or family (or just for yourself) and is not only pretty but also delicious.
The combination of Malibu, Spiced Rum, Blue Curacao and Lime Juice along with the Pineapple Juice makes for a stunning greenish blue drink that has a coconut spice flavor that is to die for.

Fresh or Prepared Juice?
While using fresh juices is often recommended in most cocktail recipes, it’s often a lot more expensive as well. While I do recommend using fresh limes if you have them around, I also am not a fan of wasting ingredients and since I tend to make quite a few cocktails, I often have quite a bit of lime juice kicking around and using it rather than having it expire is always my preference.
Obviously, when it comes to pineapple, it’s far harder to make your own pineapple juice than to simply buy a bottle so I tend to go that route but if you prefer making your own, don’t let me stop you!
Garnish with a lime slice, and serve. I hope you like it!

Mermaid Water Cocktail
Ingredients
- 2 ounces Malibu
- 1 ounce Spiced Rum
- 1 ounce Blue curaçao
- 6 ounces Pineapple Juice
- 1/2 ounce Lime Juice
- one lime sliced into wheels
Instructions
- Place 1/2 cup ice cubes into a hurricane style glass. Place 2-3 slices of the lime along the sides of the glass, facing the outside, with the ice on the inside pushing it against the glass.
- In a shaker filled with ice, place the Malibu, spiced rum, curaçao and pineapple juice. Shake until chilled, then pour into the prepared glass.
- Fill with extra pineapple juice if needed, then garnish with a lime slice and serve.
