Nothing beats a watermelon salad when it’s peak watermelon season! Add in some blackberries, arugula and feta and you have sweet, tangy, savoury and salty all in one fabulous salad.

Sweet Watermelon Salad

This salad blends arugula and spinach with juicy, ripe watermelon cubes and blackberries, with a salty snap from feta cheese. I also love to add a handful of torn mint leaves as well. Topped off with a sweet balsamic vinaigrette, this salad is anything but boring!

Arugula

Fresh arugula leaves add a distinctive spicy kick to salads, pasta, sandwiches, and sauces. Depending on their maturity, the leaves’ flavor can range from bright and tangy to peppery and slightly bitter.

Types Of Feta Cheese

We most often find Greek Feta on our grocery shelves, but there are actually many types. The three most popular options are Bulgarian, Greek, and French. Both Bulgarian and Greek fetas tend to be slightly saltier than the French variety.

Bulgarian feta may be made from sheep’s milk, goat’s milk, or a combination of both, while Greek feta is predominantly made from sheep’s milk, with up to 30% goat’s milk mixed in. French feta, made entirely from sheep’s milk, is the least salty of the three types.

Karlynn’s Tips

  • If you don’t like or can’t find blackberries, you can always use sliced strawberries for the fruit in this salad.
  • This is best made fresh right before serving. The leaves tend to wilt fast with any moisture from the berries or dressing.

Ingredients
 

Dressing

  • ¼ cup balsamic vinegar
  • ¼ cup olive oil
  • 2 tablespoons shallots finely diced
  • 2 tablespoons honey
  • 1 tablespoon lime juice
  • salt and pepper to taste

Salad

  • 2 cups arugula washed and dried
  • 2 cups baby spinach leaves
  • 2 cups watermelon chunks bite-sized
  • 1-2 cups blackberries
  • ½ cup crumbled feta cheese
  • 4-6 leaves fresh mint diced

Instructions
 

  • Combine the dressing ingredients into a mason or other lidded jar. Shake to combine completely. Taste test then add more salt/honey as desired, then set aside.
  • In a large salad bowl, toss the spinach and arugula together. Top with the watermelon and blackberries. Toss lightly to mix.
  • Drizzle the desired amount of dressing over top of the salad, tossing lightly to coat the ingredients with the dressing.
  • Once done, sprinkle the feta cheese and the diced mint leaves over the top.
  • Serve in bowls immediately.
