Strawberry Spinach Salad
Nothing says summer like a bright strawberry and spinach salad. The crunch of the leaves mixed with the freshness of the fruit come together to create the perfect lunch on a hot summer's day.

Ingredients

oz spinach
(rinsed)

large strawberries
(rinsed, hulled and sliced)

cup
almonds
(sliced)

feta cheese

red onion
(thinly sliced)

grilled avocado
(sliced for on top of the salad)

Poppy Seed Dressing
Instructions
Slice the onions and place them in a bowl of water. Set aside.
Rinse the spinach and trim off any thick woody stems. Pat dry the spinach.
Remove the onions from the water and pat dry, add to a large bowl, mix the spinach, strawberries, and feta in and toss gently.
Prepare the poppy seed dressing as directed and pour over the salad and toss lightly to coat.
Sprinkle the slivered almonds on top, add your grilled avocado on top and serve.
